They are very light. I think there’s as much air in them as bread. If you push down on one or just bite into one it goes very flat and doesn’t really spring back. The inside isn’t dry and fluffy; it’s slightly moist. There is a thin, crispy crust on top. I don’t know why but the top also has a slightly scratchy, almost pimply texture (but not always…I’ve had some with a smooth top). They are very easy to tear open with thumbs. In fact, you couldn’t really cut into them with a knife because they’d just go flat with the pressure. Scottish morning rolls and jam were made for one and other.
