The Apple (Oxford) dictionary mentions 'tortuce' as a late Middle English spelling. It's easy to see how that could become tortoyse or tortoise. Anyway, I think I have over the years pronounced it all three ways (the last sound can be like an ess or a zed). My pronunciation is influenced by whatever I'm hearing. I just can't help feeling that tortus is a lazy way of saying it.
